I want to make this syrup but am completely confused can you explain it more?
Mint Syrup:

1. Blanch and shock the fresh mint in boiling water and then in ice water to set the color. Strain the water off of the mint and squeeze as dry as possible. Place the mint pulp into a high speed blender.

2. Cook the sugar and water to 240F (soft ball stage) and pour into the blender over the mint. Turn the blender on and blend on high until all is pureed. Blend in the corn syrup and oil. Strain through a fine mesh strainer and reserve for service.

That sounds like a dangerous recipe for a beginner. Pouring 240 degree syrup over wet mint and turning a blender on sounds a bit like Russian Roulette, something you may get away with a few times before you seriously burn yourself or someone else. I would add the mint to the hot syrup and stir a while in the pot, then strain. This is almost exactly how I make a ' Burnt Orange Wasabi sauce for halibut and that's what I do. Add the orange concentrate and zest to the hot pot of syrup then strain.
