my buttercream icing tastes to much like icing sugar and not enough like icing?!?
iv recently developed a passion for making cup cakes... i got a butter cream icing recipe off the wilton web site and all the reviews for it where great.... but after it was made it all it tasted like was confectioners sugar... how do i make it less sweet and more creamy like the pre made frosting from the super market?
this is the recipe i used 1/2 cup solid vegetable shortening
1/2 cup (1 stick) butter or margarine softened
1 teaspoon clear vanilla extract
4 cups sifted confectioners' sugar (approximately 1 lb.)
2 tablespoons milk
n large bowl, cream shortening and butter with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use.
i did use unsalted butter .... and i would like to make the icing not buy it
I personally think the canned frosting at the supermarket tastes infinitely sweeter than anything you could make at home (most due to the super sweet taste of the evil High Fructose Corn Syrup) but if the icing doesn't taste like sugar, I'm not sure what you want it to taste like (unless you like the artificial flavors in the canned frosting).
Ramp up the vanilla extract to another teaspoon for a more vanilla flavor, or buy other extracts in your favorite flavors. Every store sells Orange and Lemon extracts. Many also sell Peppermint. For depth of flavor add 1 teaspoon of Vanilla extract with 1 teaspoon of another flavor. Taste it until it has the flavor you want.
If you want to take it to the next level, get paste-style food dyes and color your frosting to give your friends and family a clue as to what they are going to bite into.
If the frosting as you made it is really too sweet, take out 1 one of the cups of sugar to start then start adding it back in 1/4 cup at a time until the level of sweetness you want is achieved.
