What is going on here? Cheesecake problem...?
Before, I was able to make perfect cheesecakes. Now, they all look great at first then they start to deflate (I don't remember cheesecakes doing that). Before, I used to make it by hand but now, I use a hand mixer. Could it be that I'm over-whipping or mixing the batter.
Any ideas. I'll try to make the 3rd one by hand to see it over-mixing is the problem.
Here is the recipe that I used for the second one. Recipe makes two cakes.
Cream Cheese 3 lb. 6oz
cake flour 2oz
granulated sugar 18oz
eggs 8
heavy cream 5oz
vanilla extract .5 oz
The first time I made it, it was as if I made a souffle. It grew big and tall but as soon as it was removed from the heat, it would deflate.
Overbeating is the curse of a good cheesecake. Go back to hand mixing and you should be good to go! Merry Christmas!
